The peeling apparatus includes a device 3 for conveying the leeks positioned transversely with respect to the direction of advance, means 18 for holding the leeks, via their leaves, on the said conveyor 3 during the peeling operation, peeling means 5 including flexible fingers 17, which peeling means consist of two endless belts (carpets) 7 and 8 turning in opposite directions from each another and between which the stems of the leeks circulate. The straddling and the movement of the fingers 17 of the said belts (carpets) 7 and 8 peel the leeks by pulling and tearing off the skins from the leaves towards the roots. The apparatus also includes an aspirator 29 intended to grind and discharge the waste. <IMAGE>
