PURPOSE:To obtain an adlay cake containing proteins, fat and vitamins of adlay, keeping high nutritive value and free from odor and harsh taste, by immersing hulled and expanded adlay in sugar syrup and draining the syrup. CONSTITUTION:Polished or unpolished adlay grains are optionally immersed in water and expanded in gaseous or liquid phase. The expanded grains are immersed in a sugar syrup having a sugar concentration of about 15-90% for about >=10hr. Finally, the syruped adlay grains are drained and optionally dried to obtain the objective cake. The gaseous phase mentioned above is an atmosphere of a so-called incombustible gas which is gaseous at normal temperature, e.g. air, steam, etc., and the liquid phase in an edible solution which is liquid at normal temperature, e.g. water, sugar solution, salt solution, etc. It is necessary to carry out the expansion of the grain by heating at 100 deg.C under a pressure between atmospheric pressure and 7atm. |
