This process essentially entails the following steps: a) adsorption of the tannic active principle, from an extractive solution of the raw material, on an adsorbent polymer having amide or equivalent functions; and b) selective and quantitative desorption of the tannic active principle bound to the adsorbent, the desorption employing bases or substances having basic properties. The invention also relates to the applications of this active principle employing its anti-enzymatic activities.
