<p>PURPOSE:To keep a cherry in fresh state over a long period, by packaging a cherry together with an ethylene adsorbent in a container having controlled oxygen content and humidity, cooling the content stepwise to freezing temperature, keeping at the temperature for a necessary time interval and returning stepwise to room temperature. CONSTITUTION:A cherry is packaged together with an ethylene adsorbent in a packaging container having oxygen and moisture barrier properties. The space in the container is controlled to an oxygen concentration of 1-15% and a humidity of 80-95%. The packaged cherry is cooled from the room temperature to about 10 deg.C and maintained at the temperature for about 1 day. The cherry is cooled stepwise to 5 deg.C, 3 deg.C, 1 deg.C and about 0 deg.C and maintained in each temperature zone for about 1 day and stored at freezing temperature for a necessary time interval. After the storage, the cherry is returned stepwise from the freezing temperature to the room temperature spending days. The deterioration of the quality caused by abrupt temperature change can be prevented by this process.</p> |
