PURPOSE:To obtain formed hydrophobic KONJAK gel suitable as a food material, etc., by mixing a catalyst to a hydrophobic KONJAK derivative capable of forming a hydrophobic gel by freezing, forming the mixture in the form of a sheet, noodle, etc., and heat-treating the product. CONSTITUTION:Tuberous root of KONJAK (devil's-tongue) or starch of KONJAK is dissolved in water and made to react with a derivative-production catalyst (e.g. sodium citrate, calcium carbonate, etc.) under heating to obtain a hydrophilic KONJAK derivative which forms a hydrophobic gel by freezing. The KONJAK derivative is mixed with a catalyst (e.g. alginic acid propylene glycol, casein sodium, etc.) and, if necessary, other substances (e.g. buckwheat flour, milk, etc.) and formed to desired form such as sheet, noodle, etc. The objective formed hydrophobic KONJAK gel or formed hydrophobic KONJAK gel substance can be produced by the heat-treatment of the above product at >=80 deg.C. |
