PURPOSE:Polyglycerol fatty acid ester is added to eggs or their processed product to give egg-processed product which is stably storable for a long period of time, because of its antibacterial and antifungal properties, and is readily processable. CONSTITUTION:A fatty acid ester of polyglycerol of over 6 polymerization degree or less than 970 hydroxyl value such as hexaglycerol is added to eggs or their processed products. The fatty acid in the ester is a saturated or unsaturated, straight-chain acid of 12-24 carbon atoms such as lauric acid. The addition of the ester inhibits microorganisms or its spores from proliferating or germinating. Thus, the product can be stored for a long period of time, causing no addlement and deterioration, without any special treatment. |
