PURPOSE:To improve the quality of tea leaves, to reduce the load of worker, and to improve the efficiency of coarse-rolling operation, by varying the preset values of the temperature and flow rate of hot air in each step during the coarse-rolling process in a manner to decrease the difference between the measured value and the preset value of the tea-rolling temperature. CONSTITUTION:The coarse-rolling process is divided into plural stages utilizing a controlling means such as microcomputer, and the optimum hot-air temperature is determined in each stage according to the preset value of the tea-leaf temperature and the wet-and dry-bulb temperature of the ambient air. The optimum flow rate of hot air is determined based on the ratio to be preset to the base flow rate according to the properties of tea leaves and the basic flow rate based on the minimum flow rate of the hot-air generation means. The optimum period for coarse-rolling operation is caculated therefrom. The optimum period is divided by the number of stages to obtain the optimum period for each stage, which is used as the preset period. The coarse rolling of tea leaves is carried out according to the preset period during the coarse-rolling process. The measured tea-leaf temprature is compared with the preset temperature in each stage, and the preset values of the temperature and flow rate of the hot air are modified in a manner to decrease the difference.
