This apparatus permits the filling of containers, such as bottles 1, to a level located at a predetermined height H below the top of their opening 2. The apparatus comprises a support 3 receiving the container 1, a filling head 8 and a liquid-dispensing circuit. The head 8, which can move vertically, is composed of a bearing element 9 applied to the top of the opening 2, and of a nozzle 10 projecting underneath the bearing element 9 and inserted into the container. The liquid-dispensing circuit comprises a supply conduit 14, a three-way tap 15, a flexible conduit 16 leading to the nozzle 10, and a discharge conduit 17 emerging in a collection vessel 4. The container 1 is firstly filled completely by placing the tap 15 in a first position, and then partially emptied by bringing the tap into a second position, the level then stabilising at the low end of the nozzle 10. <IMAGE>
