PURPOSE:To produce citron flour having retained rich original flavor without destruction of components, by freeze-drying a roughly crushed or pressed citron, instantly freezing the resultant citron in liquid nitrogen, and finely pulverizing the frozen citron in nitrogen gas. CONSTITUTION:A washed citron is directly crushed roughly or pressed once in a press and freeze-dried to give <=4% moisture content, and the resultant dried product is then dipped in liquid nitrogen at -196 deg.C, instantly frozen, and then finely pulverized in a nitrogen gas atmosphere at <=-50 deg.C to give particles having <=100 mesh particle size. |
