PURPOSE:To prepare a solid or pasty food, by treating a mixture of ground fish meat and a source of animal or vegetable oil or fat, with an enzyme capable of decomposing proteins. CONSTITUTION:A mixture of ground fish meat and a source of animal or vegetable oil or fat is trated with an enzyme capable of decomposing proteins, e.g. acrosin, urokinase, etc. and/or microorganisms, e.g. mold belonging to Aspergillus genus, Mucor genus, etc. The physical properties of the protein in the fish meat are changed by this treatment, and the obtained pasty protein material is mixed with a melting agent and an animal or vegetable protein source, stirred and homogenized under melting at >=50-100 deg.C, and cooled. The obtained food is free from the shape, taste and smell of the fish meat, has smooth texture and good palatability, and is useful as a high-proteinous food. |
