发明名称 PROCESSING OF UNPOLISHED RICE
摘要 PURPOSE:To obtain delicious unpolished rice free from astringent taste and bitter taste, by storing a mixture of unpolished rice and water under acidic pH condition. CONSTITUTION:Unpolished rice (flour) is immersed in nearly equal amount of hot water, a seed produced by culturing an enzyme (e.g. lactobacillus) capable of oxidizing starch of unpolished rice is added to the rice from air and the mixture is adjusted to acidic pH condition, i.e. 2.5-6.5 pH and stored at 10-30 deg.C for 3-40 days.
