Process for the manufacture of fatty acid esters of acylated sugar, in which, firstly, the sugar is acylated with at least one C2 -C4 carboxylic acid or with the corresponding anhydride, characterised in that the acylated sugar obtained is extracted and in that the extracted acylated sugar is then subjected to interesterification, in the presence of a catalyst, with a fatty acid alkyl ester in which the alkyl group contains at most 4 carbon atoms.</p> |
