PURPOSE:To prepare a limiting enzyme useful as a biochemical reagent or an artificial conversion reagent for gene, economically, by extracting from bacterial cells obtained by the cultivation of bacteria capable of producing limiting enzyme and belonging to Bifidobacterium genus. CONSTITUTION:Bacteria capable of producing limiting enzyme and belonging to Bifidobacterium genus, e.g. Bifidobacterium breve S1 (ATCC15700); Bifidobacterium infantis: SS. lactentis 657 (ATCC25962); Bifidobacterium luminare (ATCC 25866); Bifidobacterium breve YIT4006 (FERM-P No.3906), etc. are cultured. AFter culturing, the cultured product is centrifuged, and the objective limiting enzyme is separated from the collected bacterial cells.
