<p>A cheese which contains all the necessary conventional components together with a liquid in which aromatic herbs esp. rosemary, tarragon and thyme have been steeped is prepared by seeding part of the milk used in the production of the cheese after maturation with fresh pasteurised milk, heating to a certain temp., adding spices, keeping at that temp. until a predetermined acidity is achieved, hardening and salting the cheese with a brine containing the herb liquor.</p> |
