The product may be used to form imitation meat and reformed meat products, and may be formed into mats or mixed with binders or meats. The protein may be from a vegetable source e.g. soy- or field - bean, an animal source e.g. blood - plasma. muscle or fish protein. Coagulation may be effected in the presence of a salt solution e.g. CaCl 2 and heating the liquid to 70‹C and above also aids coagulation. Examples describe the discharge of soya protein in droplets from a hypodermic syringe into hot Na 2 SO 3 solution whereby a leaf - like structure having at least a 10 fold increase in surface area was produced. Example XVI describes the preparation of a proteinaceous sea - food analogue which was served with mayonaise, tomato ketchup and lemon juice.</p> |
