PURPOSE:To obtain a functional protein material capable of freely controlling transparency and viscosity. CONSTITUTION:The subject functional protein material is obtained by adding an acid to egg white or a diluted material thereof, reducing ionic strength and then adjusting the prepared solution to pH<=4.2 and a functional protein material which is prepared by further heating the protein material.
