FIELD: food industry.SUBSTANCE: method includes washing stars with sea water, releasing from rinsing water by trickling, freezing and storage. According to the first option, before freezing, living stars in are soaked in advance in perforated containers for 6-36 hours at temperature from 0 to +28 °C.
