PURPOSE: A processing and mass-producing method of green whole grains is provided to maintain all the nutrients functionalities contained in the grains, and to offer the chewy texture of the grains to users. CONSTITUTION: A processing and mass-producing method of green whole grains comprises the following steps: harvesting whole grains in the green ripe stage before the yellow ripe stage, and inserting the grains into a storage tank(S10); discharging the grains from the tank, and steaming at 88-102 deg C for 30-120 seconds using water or steam(S20); rapidly cooling the grains at 1-7 deg C, and blowing wind to the cooled grains(S30, S40); warm-air drying the grains at 35-50 deg C(S50); maintaining the water content of the grains in 11-17%, and storing the grains at 5-10 deg C in the hulled state(S60); removing the outer hulls and foreign materials from the grains(S70, S80); assorting grains having the green color(S90); and packaging the green whole grains(S100).
