<P>PROBLEM TO BE SOLVED: To provide a method for producing white pepper in high efficiency, reducing wastewater load of a reaction solution used during enzymatic reaction, further whitening the color of white pepper without bleaching, and further facilitating utilization of peppercorn coat and peppercorn as side products. <P>SOLUTION: The method for producing the white pepper includes treatment with an enzyme having plant tissue-breaking function, includes removal of the peppercorn coat prior to the enzymatic treatment, thus the white pepper is produced according to the method. <P>COPYRIGHT: (C)2009,JPO&INPIT |
