摘要 FIELD: food industry.SUBSTANCE: invention relates to food industry, namely to production of kvass. Method consists in extracting dill seeds by liquid carbon dioxide to separate miscella, prepared yacon is cut, dried in UHF field to residual humidity about 20 % at UHF field power which provides warming of yacon inside the bits to 80-90 °C during at least 1 hour, fried, impregnated with separated miscella with simultaneous increase of pressure, depressurisation to atmosphere pressure with simultaneous freezing of yacon, crushed and mashed together with leavened loaves and hot water, then three times is infused with separation of the liquid phase from pulp to produce kvass wort, one adds to it 25 % of sugar formulation quantity in the form of white syrup, fermented with a mixture of pure cultures of kvass yeast race M and lactic acid bacteria races 11 and 13, blended with the remaining sugar in the form of white syrup, and bottled.EFFECT: described above method cuts duration of process and increases foam stability of target product.1 cl
