The method involves acquiring measurements of physical magnitudes of temperature, pressure and pressure loss specific to an air bleed system (1) at successive instances. Current estimate (W1) of air flow taken on an engine (39) of an aircraft is evaluated based on measurements of physical magnitudes at current instance. Current minimal air flow data (W-ECS) defined by predetermined flow tables is acquired at the current instance. Current estimate of the air flow and the current data of minimal are hybridized at current instance to form second current estimate (W2) of the air flow. Independent claims are also included for the following: (1) a method for controlling an engine of an aircraft (2) a device for real-time determination of air flow drawn on an engine of an aircraft (3) a logic controller for controlling an engine of an aircraft to implement a method for real-time determination of air flow drawn on an engine of an aircraft.
