PROBLEM TO BE SOLVED: To provide a method in which mono-dispersed fat globules having a large particle diameter of a particle size of 10 to 80 μm, can be stably produced.SOLUTION: Provided are: a production method of mono-dispersed fat globules having a uniform particle diameter of a particle size of 10 to 80 μm, characterized by applying, during the delivery of a fat that is to be a dispersed phase 7, into a water phase 12 that is to be a continuous phase 6, through a large number of pores 13 having a uniform aperture, an oscillation 15 of 150 Hz or more to the structure having the pores 13; a production method of mono-dispersed fat globules in which the water phase 13 that is to be a continuous phase 6, contains an emulsifier by 0.5 to 3% (w/w). |
