摘要 The present invention relates to a method for manufacturing a fermented metabolite of curcuma longa containing germanium and a fermented metabolite of curcuma longa manufactured thereby, and more specifically to a method for providing a fermented metabolite having a high content of curcumin having functions of anti-inflammation, anti-amyloid, anti-oxidation and antitumor; and a fermented metabolite of curcuma longa manufactured thereby. To this end, the present invention comprises the steps of: (A) manufacturing a germanium aqueous solution by melting germanium oxide in water; (B) dipping the curcuma longa in the germanium aqueous solution; (C) growing the dipped curcuma longa; (D foliar-application of the germanium aqueous solution in the curcuma longa; (E) pulverizing and sterilizing the cultivated curcuma longa; (F) injecting Aspergillus oryzae into the pulverized and sterilized curcuma longa and solid-fermenting the outcome; (G) extracting the curcuma longa by an ethanol aqueous solution; (H) manufacturing a solid-fermented curcuma longa extract powder by filtering and concentrating the extract obtained in the step (G); (I) injecting Bacillus subtilis and Leuconostoc mensentroides into a medium containing 100 wt% of water, 0.7-1.5 wt% of glucose, 0.3-0.6 wt% of yeast extract, 1.4-3 wt% of the solid-fermented curcuma longa extract, and 2-4.5 wt% of the pulverized curcuma longa and liquid-culturing the outcome; and obtaining a curcuma longa metabolite by filtering and concentrating the liquid-cultured medium.
