The present invention proposes a video encoding method and a video decoding method using offset adjustment according to pixel classification per maximum encoding unit. According to the present invention, disclosed is the video encoding method which determines an offset parameter including an offset type showing whether a pixel value classification method of a current maximum encoding unit is an edge type or a band type, an offset class showing edge direction or band range and an offset value showing a difference between restored pixels and original pixels at every maximum encoding unit, and outputs offset merge information showing whether to adopt the offset parameter of a left or upper maximum encoding unit of the current maximum encoding unit as an offset parameter of the current maximum encoding unit.
