摘要 PROBLEM TO BE SOLVED: To provide a method for producing noodles having a texture and reduced boiling time by using modified starch having a high natural orientation and modified physical properties.SOLUTION: Raw starch powder is contacted with strain belonging to (Bifidobacterium subtile) to obtain modified starch whose physical properties are modified. By using the modified raw starch as a part of the raw material, noodles having a modified texture and reduced boiling time can be produced.
