摘要 The present invention relates to a method for manufacturing meat analogue including soybean proteins treated by a mixed enzyme and to a composition for soybean bulgogi (Korean barbequed beef) using the same, and more specifically, to a method for manufacturing meat analogue by using a hydrolysate of soybean proteins with improved functional properties made by mixing protease into soybean proteins, and to a composition for soybean bulgogi including the meat analogue. As protease is mixed into soybean proteins, the present invention makes soybean bulgogi chewy and soft and possess a pleasant flavor, thereby having high industrial applicability in food fields.
