In apparatus for preparing articles of food for frying, a continuous conveyer carries the articles past means which apply a uniform coating of batter to the articles as they pass. As shown, an endless wire conveyer 1 supported on guide rollers 3 and having compartments for receiving individual fish fillets, carries the fillets through a flouring section 6, a battering section 7 and a bread-crumbing section 8 and thence to a frier 5. Flour is fed from a hopper 10 by a roller 11 and an adjacent brush 12, rotating in the same direction as the roller, sprinkles the flour on to fillets passing beneath. The fillets are coated underneath with flour sprayed up by rotating rollers 15 and rotating brushes 16 from a hopper 14 within a tray 13. The floured fillets are then carried under a stream of batter issuing from an adjustable slot 24 in a tank 23 to which batter is pumped from reservoir 17 by pump 20. Pump 20 also pumps batter to a reservoir 25 which is so arranged that the batter level in it is above the level of the conveyer to coat the undersides of the fillets. An air jet 26 removes surplus batter from the fillets and the excess returns to the reservoir 17. The bread crumbs are applied in the same way as the flour except that the direction of rotation of the roller in the feed from the hopper is reversed. The fillets are then fed to the frier 5. On the return run, the conveyer is cleaned by water sprays 28 and rotary brushes 29. |
