摘要 PURPOSE: A production method of lotus honey bread is provided to insert filling containing candied lotus roots and yam into dough with red bean sediments. CONSTITUTION: 100 parts by weight of flour, 40-60 parts by weight of condensed milk, 20-40 parts by weight of eggs, 15-25 parts by weight of white bean sediments, 5-15 parts by weight of glucose, 0.5-1.5 parts by weight of baking powder, and 0.5-1.5 parts by weight of baking soda are mixed. The mixture is aged to obtain bread dough (S1). 100 parts by weight of red beans, 10-30 parts by weight of candied lotus roots using honey, 2.5-7.5 parts by weight of yam, 5-15 parts by weight of chestnut, and 2.5-7.5 parts by weight of walnut are mixed to obtain filling (S2). 150-200 parts by weight of filling are inserted into 100 parts by weight of bread dough to obtain a molded product (S3). The surface of the molded product is coated with egg water, and the coated product is baked in an oven (S4).
