<P>PROBLEM TO BE SOLVED: To provide a method for concentrating PUFA (polyunsaturated fatty acid), particularly DHA (docosahexaenoic acid), EPA (eicosapentaenoic acid), or the like, contained in stock oil. <P>SOLUTION: A method for producing PUFA concentrated oil includes processes for subjecting fat and oil containing PUFA as fatty acid that composes the fat and oil, to a hydrolysis reaction by a lipase, and separating a glyceride fraction with PUFA concentrated, wherein one of calcium hydroxide, magnesium chloride, ammonium sulfate, calcium carbonate, potassium dihydrogen phosphate and ammonium chloride is added as a reaction additive of the hydrolysis reaction by the lipase. <P>COPYRIGHT: (C)2013,JPO&INPIT |
