PURPOSE: An aging method of pork belly using a sea tangle extract is provided to offer useful nutrients of sea tangle and the pork belly to users by impregnating alginic acid contained in the sea tangle to the pork belly. CONSTITUTION: An aging method of pork belly using a sea tangle extract comprises the following steps: mixing the sea tangle extract, rice bran vinegar, and powdered salt in a ratio of 100:30:30 to obtain liquid marinade(S1); slicing the pork belly into the thickness of 3~10mm, and dipping the pork belly in the liquid marinade for 30~60minutes(S2); dipping dried sea tangle into the liquid marinade for 30~60minutes(S3); covering the pork belly dipped in the liquid marinade with the sea tangle dipped in the liquid marinade, and covering the obtained product with a vinyl wrap(S4); aging the product at 0~4deg C for 2~5days(S5); and decompress-vacuum packing the product(S6).
