Meat composition comprises: (a) 1-50 wt.% of textured wheat protein; (b) 0.1-10 wt.% of a mixture comprising (b1) 0.1-88 wt.% of meat powder, (b2) 0.1-60 wt.% of beetroot extract, (b3) 0.1-10 wt.% of caramel and/or pepper extract and (b4) 0.1-15 wt.% of rosemary extract; (c) 40-98.9 wt.% of meat; (d) 5-40 wt.% of water; and (e) optional additives and/or auxiliary materials, where the amount of (b1)-(b4) and (a)-(d) is 100 wt.%, and the amount of optional compound (e) is additionally added. An independent claim is included for a meat substitute, preferably as an ingredient of the meat composition in which the component (e) contains no natural and/or artificial aromatic substances. |
