A device for dehydrating ginseng is provided to allow maintenance of freshness of ginseng for longer and ensure ginseng safety after harvest by the surface treatment of ginseng without damaging fine roots while minimizing the damage of the body and reduce ginseng spoilage during storage and distribution. A ginseng dehydrating device(400) comprises: a transfer conveyor to continuously supply ginseng; a compressed air inlet pipe(404) with a compressed air inlet port(402) to receive compressed air by a compressor and branched into the upper side and lower side of the transfer conveyor; an upper compressed air distribution pipe(406) and upper compressed air branch pipe(410,412,414) connected to the compressed air inlet pipe and disposed at the upper side of the transfer conveyor; a lower compressed air distribution pipe(408) and lower compressed air branch pipe(422,424,426) connected to the compressed air inlet pipe and disposed at the lower side of the transfer conveyor; an upper compressed air injection nozzle installed at the upper compressed air distribution pipe or the upper compressed air branch pipe and downwardly injecting compressed air; and a lower compressed air injection nozzle installed at the lower compressed air distribution pipe or the lower compressed air branch pipe and upwardly injecting compressed air, a dehydration treatment part to collect and discharging water which is removed from ginseng, wherein the transfer conveyor comprises a pair of transfer conveyors to allow ginseng to transfer by insertion there between and has a pulse wave-type unit wire which is connected in an advancing direction and a mesh structure to allow free distribution of wash water.
