FIELD: food industry. ^ SUBSTANCE: the present innovation deals with cutting and freezing celery stalks; cutting and blanching sweet and hot pepper; cutting the skinned fish fillet. The above-mentioned components should be mixed at oxygen-free technique. One should mix drinking water, acetic acid, sugar and common salt to obtain the pickle. The mixture obtained and the pickle should be packed, sealed, cooled to be kept till maturation. The innovation enables to manufacture preserves being of increased digestibility. ^ EFFECT: higher efficiency of manufacturing. |
