PROBLEM TO BE SOLVED: To provide a method for producing an itaconate saccharide derivative useful as a raw material for a sugar-containing polymer in a water-containing organic solvent having high safety. SOLUTION: The invention provides a method for producing an itaconate saccharide derivative expressed by general formula (I) by reacting itaconic anhydride with an amino sugar and provides the itaconate saccharide derivative. In the formula, R is a group of formula (II) or formula (III); and R' is H, glucose residue or cellobiose residue.
