PROBLEM TO BE SOLVED: To provide a method for extracting tea or the like comprising utilizing circulation flow of extraction liquid in accordance with the kind of raw material when making the extraction liquid taken out from an extraction tank to flow back to the extraction tank: and to provide a device for extracting tea or the like. SOLUTION: The method for extracting tea or the like comprises supplying raw material such as tea and extraction water into a closed-type extraction tank; and extracting essence of the raw material in the extraction tank followed by discharging residue out of the extraction tank; wherein part of the extraction liquid is taken out of the extraction tank, the extraction liquid after the taking-out process is flown back to the extraction tank, and changing the flow-back current into either a lower part area or an upper part area in accordance with the kind of the raw material for extraction when extracting the liquid in a flown-back state. The device for extracting tea or the like has such a mechanism where an extraction water supplying pipe or an extracted liquid taking out pipe are connected to a circulation pipe flowing the extracted liquid back so as to switch the flow path of the liquid.
