INDEPENDET CLAIMS are also included for: (1) pasteurization of a sugar mixture (II) (primarily liquid) (which is having a liquid medium and an albumen of an egg), comprises pasteurizing (I) at 67-85[deg]C and allowing to obtain a pasteurizing value of 100; and (2) a mixture primarily liquid comprising albumen of an egg obtained by the process.
