COLORING MATERIAL PREPARATION FOR CATTLE MEAT/FISHERY PASTE PRODUCT

PROBLEM TO BE SOLVED: To provide a coloring material preparation for a cattle meat/fishery paste product solving such problems that calcium components in the cattle meat/fishery paste product is dyed with cochineal pigment and thereby red spots appear in the pasty product when coloring the product with the cochineal pigment.

SOLUTION: The coloring material preparation for a cattle meat/fishery paste product is obtained through selecting cochineal pigment as a coloring material for the cattle meat paste product to prepare a coloring material preparation containing sodium metaphosphate, coloring the cattle meat/fishery paste product such as Kamaboko or terrine with the coloring material preparation so as to suppress generation of the red spots caused due to dyeing on calcium components.
