It is intended to provide a practically usable process for conveniently producing a soybean peptide mixture, which has a favorable flavor with little bitterness, at a low cost without resort to a procedure for lessening bitterness. A process for producing a soybean peptide mixture characterized by comprising adjusting the pH value of a soybean protein solution into an alkaline region (pH 8 to 10), maintaining it within the alkaline region for 5 to 300 minutes and then enzymatically digesting the same.
