<P>PROBLEM TO BE SOLVED: To provide a noodle boiling apparatus producing noodles having improved cleanliness after washing with water and cooling. <P>SOLUTION: Noodles are boiled, washed with water and cooled by the noodle boiling apparatus. A cooling medium is flowed in the wall of a water-washing and cooling tank for the noodles to dispense with a cooling pipe of the water-washing and cooling tank.
