To bone meat products, and especially to strip pork from bones, a loop (24) is passed around the bone. At least one end of the bone is separated cleanly, and at least a part of the bone is cleared for the flesh to be stripped away without damage. The boning machine (10) has preparation stations to process the meat bone, and pass the loop around one end. A pneumatic or electrical or hydraulic drive with a piston (23) moves the loop in a direction (26) along the bone, to strip the meat from the bone under manual control (22). The machine stability is maintained by a balance unit (12).
