PROBLEM TO BE SOLVED: To suppress the increase in incineration ash of a dehydrated cake by reducing the amount of an inorganic flocculant to be used enhancing the dehydration properties of organic sludge. SOLUTION: This dehydration method includes a step (a) for adding a slurry, which is obtained by adding incineration ash of organic sludge to an acid aqueous solution with pH 2 or less and an inorganic flocculant to organic sludge, a step (b) subsequently adding an organic polymetic flocculant and a step (c) for dehydrating the obtained organic sludge.
