PROBLEM TO BE SOLVED: To provide an acylated sugar-bound gelatine, etc., usable as an edible food, namely a gelatine-fatty acid complex or gelatine hydrolyzate-fatty acid complex and to provide a method for producing the complex. SOLUTION: The gelatin-fatty acid complex or gelatin hydrolyzate-fatty acid complex is obtained by binding a fatty acid through a reducing sugar to a gelatin or a gelatin hydrolyzate. The method for producing the complex comprises binding the gelatin or the gelatin hydrolyzate to a reducing sugar fatty acid ester by Maillard reaction. COPYRIGHT: (C)2004,JPO
