PROBLEM TO BE SOLVED: To provide an operation method of a distillation apparatus to keep the purity of a distillate by optimally supplying a liquid to be distilled. SOLUTION: The operation method of the distillation apparatus 1 that is provided with an evaporation chamber 2 for the liquid to be distilled, a heating means 3 for heating the liquid to be distilled in the evaporation chamber 2 and a condenser 4 for condensing the evaporated vapor, includes a process of supplying the liquid to be distilled until the heating means 3 is submerged under the liquid to a prescribed depth in the evaporation chamber 2 in a state that the operation of the heating means 3 is stopped, a process of operating the heating means 3 in a state that the heating means is completely submerged under the liquid, and a process of supplying the rated quantity of the liquid to be distilled after the signal to start the supply of the liquid to be distilled is detected during the operation of the heating means 3.
