Method for making puffed food product from bulk starch material involves: (i) placing food starch material in a puffing chamber; (ii) expanding starch material; and (iii) constraining expansion in a first dimension while permitting expansion in a second dimension. Independent claims are included for the following: (1) A method of making a puffed product by preparing a flour; gelatinizing the flour; extruding the gelatinized material; forming pellets; placing pellets in chamber; increasing pressure and temperature until pellets become amorphous; quickly reducing pressure allowing pellets to expand. (2) A puffed snack product comprising a puffed starch body with regular perimeter, with either the top or the bottom having a wavy appearance as though individual grains were joined to each other. (3) A method of making a puffed food product by: (a) pelletizing starch material; (b) placing pellets in puffing chamber; and (c) expanding pellets. (4) An apparatus for making a puffed starch food product comprising a puffing chamber with heating means and pressure reducing means. |
