摘要
A shaped cream substitute for adding to hot dishes comprises the following ingredients : (a) 20 - 60 % spray-dried standard cream powder which contains at least 42 % fat and maximum 5 % water ; (b) 10 - 50 % spray-dried standard fat powder which contains at least 50 % fat ; and (c) 15 - 50 % pure fat matrix. Also claimed are the processes for making the substitute in portion or granulate form.
