PURPOSE: An apparatus for storing food containing a storing chamber capable of maintaining a suitable condition to store picked seafood juice and a fermentation device effective for fermentation of the seafood juice inside the storing chamber is provided. It can always maintain the same fermentation condition and impart a stable taste and is sanitary. CONSTITUTION: A plurality of storage vessels(1) are embedded in a terrace of earth(7) arranged in a heat-retaining storage chamber(6), on which a refrigerant pipe(4) is mounted on the upper part of the storage vessel to maintain the upper part to a sub-zero temperature. The terrace of earth contains alternate sawdust and sand layers in its frame and an electric heating coil around storage vessels to maintain an optimum temperature for aging food.
