The present invention is directed to methods of preserving natural products, preferably in a dried form. Preferred embodiments retain one or more subjective characteristics (such as taste, colour, or olfactory properties) in the final product which may be in a variety of forms including sliced whole pieces, fragments derived therefrom, or tableted forms. Preferred embodiments freeze the raw components prior to comminution processes, and avoid subjecting the components to elevated temperatures throughout processing, apart from an optional final short drying step at an elevated temperature. |
