A process for the preparation of a fried snack chip product comprises preparing a dough from at least one starch-containing ingredient and water, heating the prepared dough, the heat-treated dough having a moisture content of less than about 35 wt.%, forming discrete shapes comprising the heat-treated dough, said shares having a moisture content of less than about 35 wt.%, and frying the treated discrete shapes to produce a fried product which has a substantially reduced level of fat. |
