PROBLEM TO BE SOLVED: To obtain a sucrose fatty acid esterase useful for producing a high- purity sucrose fatty acid ester at an industrial level by using a readily obtainable substrate by a biological method high in safety. SOLUTION: This sucrose fatty acid esterase protein participates in synthesis of a sucrose fatty acid ester using sucrose and a fatty acid as substrates/ decomposition reaction, a variant has the activity of the protein or their active fragment and has preferably an amino acid sequence of the formula (or an amino acid sequence in which several amino acids are deleted, substituted or added in the sequence). The esterase is obtained by culturing Ideonella sp. No. 13 (FERM P-16,206) and collecting the supernatant liquid of the culture solution.
