The convection grill oven having a variable heat shield plate assembling body is capable of selectively using radiant heat or convection heat in accordance with the cooking type. The convection grill oven comprises a plurality of heat shield plates, each having a streamline section and taking a long plate shape, which are arranged in series in a horizontal direction of a grill oven body and turned in a horizontal direction in case of the downward movement of an upper and lower moving member, to block the space between a grill burner and a cooking ledge, and in a vertical direction in case of the upward movement of the upper and lower moving member, to connect the space between the grill burner and the cooking ledge.
